SOPAPILLA CHEESECAKE

This is all that’s left of it! The very last morsel is mine 🙂 My sister-in-law, Lucy, made this for Mother’s Day and I’m sharing the recipe because it is so delicious!

The origin of this recipe is the kitchen of Betty Zwahr, of Texas.

Sopapilla Cheesecake

3 – 8 oz. pkg cream cheese, softened.

2 pkg crescent rolls

1 1/2 c sugar

1 tsp vanilla

1 stick butter, melted

Topping:

1/2 c sugar

2 tsp cinnamon

Unroll 1 pkg of crescent rolls into the bottom of a greased 9 x 13 pan.

Whip cream cheese, sugar and vanilla and spread over the crescent rolls. (please resist eating this deliciousness with your fingers!) Top with 2nd pkg of crescent rolls. Pour melted butter over the top and sprinkle with sugar and cinnamon.

Bake for 30 minutes @ 350 degrees.  Eat quickly before it’s all gone and there’s only a bite left!

Brown Sugar Body Polish

….so my daughter was scraping the bottom of the jar of Brown Sugar Body Polish that I had made for her, and decided to make her own. It didn’t quite turn out, so she called me to ask what she had forgotten.

Here’s what I put in the jar:

2 cups Brown Sugar

1 cup Granulated Sugar

2 Tbsp Vanilla

1/4 tsp Almond Oil (optional)

1 cup of your favorite oil, Sunflower, Cottonseed, Coconut, Olive (light)

Stir all ingredients together till all the lumps are gone. You want the consistency of soft playdough so it won’t run through your fingers and down the drain.

She forgot the granulated sugar 🙂

This feels and smells wonderful!

The Silver Lining

I can’t think of very many advantages to my folks living halfway across the country, but when I receive a Box-O-Cheese from Dad, it helps me see the brighter side! The best cheese in the country landed on my front porch yesterday, helping me to see The Silver Lining. Mom & Dad live a stone’s throw from “The Cheese”, but I am in Texas, so it’s a real treat to get varieties you can’t find at Wal-mart! Don’t be jealous, just say CHEESE 🙂

The Right Shade of Beige

Coffee is yummy. I like it very much. In the morning, in the afternoon or in the evening 🙂

The coffee cup I keep at work is a tall, clear glass mug with a gold maple leaf on the side. I got it at the airport in Edmonton, Alberta, many years ago. Those of you who’ve been in my office in the morning, you’ve probably seen it and know what I mean by “beige”! lol Ok, so I like a little coffee with my cream ❤

Coffee is yummy, inside and out! I made a body scrub from coffee grounds & brown sugar that felt so good on my legs after a long day, I want to share it with you. This scrub exfoliates while it moisturizes your skin.

I’ve read a little about caffeine and cellulite , but I’m not going to make any claims of that nature.  I do know this, after an afternoon of yard work, pulling weeds and the such, this scrub feels wonderful on your body.

Here’s what I put in the jar:

1 cup coffee grounds. (I like “The Taste of Texas”:))

1 cup of brown sugar. (I also like this in my coffee to drink!)

4 tsp. baking soda

4 tsp vanilla extract

a dash of cinnamon

Coconut oil, till you have the consistency you like. I don’t like a scrub that runs through your fingers and down the drain, kinda defeats the purpose! I like it sort of chunky, so you can hold onto it.

Rice, Black Bean & Avocado Salad

This side salad does double duty as a light meal and can be served warm or cold. Enjoy it right away or make ahead and refrigerate to give the flavors extra time to come together.

ingredients

  • 2 tablespoons olive oil
  • 1 cup diced onion (about 1 medium onion)
  • 3/4 teaspoon cumin, divided
  • 1 cup white rice, rinsed well
  • 1 1/2 cups vegetable stock
  • 1 1/2 teaspoons garlic salt, divided
  • 2 cans (15 ounces each) seasoned black beans, well drained
  • 2 teaspoons chopped cilantro leaves, or to taste
  • Juice of 1 lime, or more to taste
  • 2 avocados, diced

directions

Add oil to heated pan and sauté onion for 4 to 5 minutes over medium heat. Add 1/4 teaspoon of the cumin and stir for another 30 seconds. Add rice, stock and garlic salt and bring to boil. Reduce to lowest heat, cover and cook for about 18 minutes, or until rice is just cooked. Fluff rice with fork and allow to cool slightly, or completely if you are serving the salad chilled.

In large bowl, combine drained beans with remaining 1/2 teaspoon cumin. Add cooled rice, cilantro and lime juice and toss together. Taste and adjust seasoning and lime to taste. Top with avocado just before serving and toss gently.

Variation: Substitute 1 can of corn for avocado if desired.

Tip: Time-saver: Seasoned black beans include salt and basic seasonings that infuse the beans with flavor that would otherwise take time to develop.

I Love Fall Colors!

Can you think of anything more wonderful than the aroma of New Mexico Green Chili roasting?

The smell is heavenly and the color is fantastic! Fall is my favorite time of year ❤

I roasted these babies in my hubby’s BBQ pit on a lovely day last Fall. Once they’re nicely toasted I douse them in cold water so the skins come off easier and they’re not so hot to handle. Quart-size zip lock bags are the perfect storage compartment until it’s time for you’re favorite recipe. Roasted long green chili keep well in the freezer. When your recipe calls for green chili, take them from the freezer, slice, dice or stuff ’em and enjoy a little taste of The Land of Enchantment!

My favorite way to eat them is straight out of the field, but they’re not too bad

dipped in chocolate either! I used Almond Bark, melted in the microwave for

these and they were awesome 🙂

Oregon Mint Sugar Rub-a-dub Scrub

Mint grows in my mother’s garden on the coast of Oregon. It’s fragrant leaves smell

divine in my homemade sugar scrub. After a good buff with this luscious scrub, your

skin will glow and you will smell wonderful 🙂

To make 6 – 8 oz. jars of sugar scrub:

6 1/2 cups of your choice of sugar.

1 cup of Coconut oil

1 cup of Cottonseed oil, or your favorite.

1-2 cups fresh dried Mint, crushed.

40 drops of peppermint essential oil.

Stir all ingredients together and divide into jars & enjoy within 2 weeks.

Makes very thoughtful gifts 🙂

After you’re out of the shower, have a relaxing cup of Mint Tea!
